Hoppy Easter Overnight Weet-Bix Delight

With the Easter holidays in reach, we've put together this delicious 'Easter themed' overnight Weet-Bix delight (big thank you to our friends at Sanitarium for the inspiration!

Makes approximately 10-12 servings:

  • Place 10-12 Weet-Bix biscuits flat on the bottom of a large container.
  • Pour over 700ml(ish) of Anchor milk and lightly press down with a fork (you want the Weet-Bix biscuits wet but not soggy)
  • Sprinkle 3/4 cup of sultanas on top and press with a fork
  • Combine 900g of plain unsweetened yoghurt with 5tsp of cinnamon and 5 tsp of maple syrup. Mix together until creamy and delicious and then carefully layer on top of the Weet-Bix.
  • Sprinkle over another 1/4 cup of sultanas and if desired, drizzle a nut butter* of your choice in a crisscross fashion (we love almond butter or peanut butter)
  • Pop a lid on and store in the fridge overnight (or at least 2-3 hrs)
  • Scoop into bowls and enjoy!

You can serve this on its own or you might add some fresh or tinned fruit.

*for our nut free schools, try carefully sprinkling cinnamon or some chocolate powder on top in a crisscross pattern to create the 'hot cross bun' effect
